  • 8 bone-in, skin-on chicken thighs
  • Salt and black pepper
  • 1/4 cup dijon mustard
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp dried thyme

Preparation


  1. Preheat your Oakford Pellet Grill to 107°C.
  2. Season both sides of the chicken thighs with salt and black pepper. 
  3. In a medium bowl, mix together the mustard, honey, apple cider vinegar, garlic, smoked paprika, and thyme until well combined.
  4. Place the chicken thighs in a single layer in a large baking dish. Brush both sides of the chicken with the honey-mustard glaze.

Cooking Instructions

    Smoke the chicken for 45-60 minutes, brushing with additional glaze every 20 minutes, until the internal temperature of the chicken reaches 74°C.
