Smoked to perfection

Duck is a popular Christmas meat, but not something that many South Africans are used to as a staple on the table. Try something new and surprise your family with this tasty yet simple recipe.

Jan Braai smoked a big 2kg duck on our Oakford 790 Pellet Grill using the Oakford Premium Pellets Heritage Blend.



  • 2kg Duck
  • Chinese 5 spice
  • Salt


Using the Nexgrill App set the Pellet grill to the smoke cooking method at 180°C and the temperature probe to 90°C.

Cooking Instructions

  1. 1

    Rub the duck with the Chinese 5 spice and some salt.

  2. 2

    Insert your temperature probe into the fattest part of the duck and let it do it's thing.

  3. 3

    Once the duck reaches 90°C in the middle and smoked till its crispy, it is cooked and the Pellet grill will switch to warming mode.

    Serve as a filling in a wrap, or even pancakes.
