  • 2 eggs
  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 cup white granulated sugar
  • 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 cup milk
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter, melted
  • 2 cups sweet potato, mashed
  • 1/3 cup honey
  • Honey butter, for serving (equal parts honey and butter)

Preparation


  1. Mix the flour, cornmeal, sugar, cinnamon, baking soda and salt together in a large mixing bowl.
  2. Add mashed sweet potatoes and mix well.
  3. Add in eggs, melted butter, honey, and milk, be sure all ingredients are well mixed.
  4. Pour mixture into a bread pan.

Cooking Instructions

    Set your Nexgrill to 180°C.

    Set bread pan on the Oakford Pellet Grill, and bake for around 30-40 minutes.

    Use a toothpick to test the doneness. Stick it in the middle, and if it comes out clean, you’re good to go. If it doesn’t, give your bread a few more minutes.

    Serve your hot cornbread with honey butter.
